ZU(zoo) bakery is a bakery located in a barn on Talbot Farm in South Freeport, Maine and uses traditional French bread baking methods. Everything is baked in a large wood-fired brick oven with certified organic ingredients including whole grains that are milled just prior to mixing the dough, unprocessed sea salt containing vital trace minerals, a levain (a natural starter), and un-chlorinated water from a local spring.
